Unpopular opinion.
A good sidestep/footwork isnt just shifting around and making people miss, its also creating space and gaining meaningful ground or buying time for ruckers. Some of these "BEST sidesteps" were just a guy beating 3 or 4 other guys but only going sideways with no ground gained or space created for momentum. Its impressive sure, but nothing was accomplished besides a highlight reel i suppose.
Cheslin is the best two stepper there is.
He will make you kiss the grass, or make you look like you were seeking for a chair.
