It's hard to seperate out speed from anticipation to determine how fast a player is. You could have them do a running race back and forth across a few meters (I seem to recall Pat Cash winning such a race – yes, Im Australian) but on court they may not be the quickest player.
With cars "quick" is suposed to refer to how quickly a car accelerates but fast is more about top speed. Perhaps in Tennis "quick" could refer to their overall court speed, including anticipation and "fast" is just their running speed".
